Parmesan Crusted Salmon with Roasted Broccoli

Salmon is one of the most nutritious food on earth! It is high in quality protein, packed with nutrients and rich in Omega-3 fatty acids. It is also one of the tastiest seafood! I’m going to share a salmon recipe perfect for a meal prep or a family dinner (just double the recipe if you are a family for 4). I bought a kilo of salmon at S&R Membership Shopping Center in BGC. I kept the rest in the freezer for another recipe.

Oh! Let me tell you that since I began practicing clean eating, one of my dilemma was deciding what should I do with most of the processed food stocks on my pantry. I was brought up by my parents not to waste food. So I decided to use them little by little until they are all consumed and I will not buy them again. In this recipe, I used my stock of soda crackers. You can use breadcrumbs if you have leftovers from the previous meal that you made or a pantry stock. No throwing away of food here!

For the salmon

400 grams salmon fillets

1 1/2 tablespoons lemon juice

3 cloves garlic

2 1/4 teaspoons mayonnaise

1/8 teaspoon salt

1/4 teaspoon ground black pepper

1/8 cup finely grated parmesan

1 piece soda cracker (I used Skyflakes)

1 tablespoon chopped fresh parsley

1/8 teaspoon dried thyme

2 1/4 teaspoons olive oil

For the broccoli

5 cups broccoli

1 tablespoon olive oil

2 1/4 teaspoon olive oil

3 cloves garlic

1/8 teaspoon salt

1/2 teaspoon cracked black pepper


  1. Preheat the oven to 400 degrees.
  2. Combine lemon juice, garlic, mayonnaise, salt and pepper in a bowl.
  3. In a separate mixing bowl, combine the crushed soda cracker, parmesan, parsley and thyme and olive oil. Mix until the mixture is evenly coated with olive oil.
  4. Line the baking sheet with aluminum foil and grease it with olive oil.
  5. Arrange the salmon fillets on the pan.
  6. Using the lemon juice mixture, coat the top of each salmon fillet with the mixture. (This will help the soda cracker mixture stick better on the salmon.)
  7. Spread the soda cracker mixture on top of each salmon fillet.
  8. Combine broccoli, olive oil, garlic, crushed black pepper and salt in a bowl. Make sure the broccoli is evenly coated.
  9. Arrange the broccoli around the baking sheet, surrounding the salmon fillets.
  10. Bake for 15 minutes.
